Fluffy Sourdough Pancakes

  • 2 flax eggs ( 2 tbsp ground flax & 6 tbsp water)

  • 1 tsp vanilla

  • 1 1/2 cups of sourdough started (discard or fed)

  • 1 1/4 cups of water

  • 1 1/2 cups all purpose flour

  • 2 tsp baking soda

  • 1 tsp salt

Whisk together wet ingredients ( flax eggs, vanilla, starter, water)

Add dry ingredients and mix until combined

NOTES - 

makes about 12 medium sized pancakes (1/8 cup batter)

For no oil - we use a bench scraper on our cast iron pan

  • 3 cups of frozen fruit

  • 1 lemon

-Add lemon juice and berries into a little pot on a medium heat.

-Stir until consistency is thick and syrupy.
